Marinated Raw Vegan Feta Cheeze

Makes: 3-4 jars

V, VG, GF

 

Ingredients

Cheeze

3 cups cashews, soaked overnight in water, then drained well

4 probiotic vegan capsules, emptied out of capsule

1 cup water

 

Marinade (makes 1 jar)

2/3 cup safflower oil

1/3 cup olive oil

1-2 cloves garlic, crushed

1 tsp chopped dill

1 tsp peppercorns

1 tsp rosemary

1 chilli chopped

 

Instructions

1. To make cheeze, add ingredients to a high-powered blender and blend thoroughly for about 1-2 mins until nice and smooth like a thick cake batter consistency. 

2. Place mixture in a glass container with air tight cover and leave in a warm place for 2 days to ferment. Then refrigerate for another 1-2 days or more to chill and harden further. Once it is hard, you can slice it into small cubes, or crumble it. 

3. To make the marinade, place all ingredients together in a jar and shake well to mix.

4. Add bite size pieces of cashew cheeze and keep refrigerated for a few days for the flavours to infuse. It will last about 3 -4 weeks in the fridge.
